I am wondering what is the best way to setup this example.
I have 3 drives and want to backup to each of them as the month goes along.

For example spread each weeks backups (M-F) on the drives.

First week onto drive one - 2nd week to drive two third week to drive three fourth week back to drive 1 and fifth week if needed back to drive 2

The idea is to have as many backup days as possible with the space I have.

What overwrite and append settings do I need? What backup to disk folders do I need and how does that interface with the media set?

Yes. External array connected via scsi.
Drives configured as JBOD, example A: B: C:

Could you not create 3 policies. One for each drive.

The first policy runs every 21 days and backs up to drive 1.
The second policy runs every 21 days starting 7 days after the first policy and backsup to drive 2.
The third policy runs every 21 days starting 14 days after first policy, 7 days after second policy and backs up to drive 3.

They could all share the same selection list.
