Using AVP, yes the DOM & CDOM will be removed. The physical server that AVP will be loaded on is the DOM, The AVP is the CDOM that you will load your OVA templates to.

OVA is simply a file format. What you load these into will determine the rest.
cdom/dom0 is indicative of xen/Avaya VSP. VSP 6.x was replaced by AVP 7.x (rebranded VMWare). VSP just has the hypervisor/esxi instance.
