When I send an email out of onex portal for a conf bridge and I receive the invite it says "You have been invited to a IP office Conference"... Any way to remove this??

You will always get an email sent out from the application server so long as you have SMTP configured. However, you can change the email they receive, which is what I did for my .co. In my scheduler email, i've played Thank you for using our avaya system, some more blah blah, information for my bridge and I also included my DID for the conference bridge. Hope this helps!

How do I change the text it sends out.

Log into your one x administrator web manager.

Configuration -> Conference Dial in information:

I did that portion already and it enters that info but above that it still shows you have been invited to an IP Office Conf

That's something that's always been in my my conference emails. I'll take a gander at the app server and see if maybe there's a script somewhere in the CentOS file labyrinth.
