Best resource off the top of my head for step by step videos:
For the rest of it, there are so many variables and conditions to your system (hardware, licensed options etc) that it would be hard to say "look here". I'd try keeping eye out though on the Tek Tips forums, Sundance forums, and AvayaUsers.com. The last one there isn't as great of a resource as it was before, but the content is still searchable.
Get familiar with the Avaya Support Site. That will give you official documentation.
