I'm searching online but not getting a clear understanding of what the "Switch number" is used for in Audix LX.

Any link to documentation is welcomed.

it's the PBX node number for the subscribers
Each PBX has a unique node number.
Command: display dialplan
Command: display dialplan parameters (Definity r11 and higher)

Audix can support multiple subscribers in multiple PBX's

Does the switch number also dictates codec settings per node? Similarly as network regions?

I'm troubleshooting a voice quality issue for a remote site that is utilizing the central Audix LX.

No it does not dictates codec settings per node. This is done via each NR on page 3. You must have a NR setup for AUDIX and from there configure the how the AUDIX NR behaves with each other NR.
No similarity with NR. This number is strictly for AUDIX use only.

Voice quality issue may be attributed to inter NR routing... ip-codec... and compression. I take it that these NR is over the WAN.
