There are two ways:
1. Configure Radius AAA support in your cisco voice gateway, then it will start sending acounting records (you better turn off the authentication via radius, only accounting) to a Radius server wheer you can store them into some SQL (MySQL, MS-SQL, Oracle) and then do whatever you want.

2. The second method is to configure the Cisco to send accounting data to a remote syslog server.
I prefer the first method.
