I need some help, I want to know which ports must I open on a firewall to allow access to a Linux(Ubuntu) workstation using VNC-Viewer?

How do I enable encryption on the VNC Server which is running Ubuntu?

Depends on the version of VNC. Some have plugins, others have it built in and still others have non at all. If you want to tunnel it through SSH, there is a link on that page to do that.
