How would I go about making 3D letters in Illustrator? Is there a way?

Pre Illustrator CS you will have to do this by hand, draw the extrusions. The is no automatic way. There is an old plugin by Kai's that does this but I cannot remember the name of it.

Yep - CS has implemented Dimensions into Illustrtor.
It's quite nice too.

I do remember Kai's Vector Tools for OS9.
It was a nice set of tools.

Poor Kai has been so fragmented since the days of KPT.
