We just installed 2 8720's and had this exact same issue. Our problem is we have 50+ users that had EC500 but have 8410 sets.
You can change the station type to a 6xxx series and then give them EC500. This posses other problems, but good for a quick fix until you replace the sets.
You can have 5 licenses but not the ability to add xmobile. You would assign users EC500 by using the command "change off-pbx-telephone station-mapping xxxx"
