My favourite is increasing the canvas size non-mathematically. Surround the whole picture with the crop tool, then drag the handles away from the image. Double clicking will then increase the canvas to the size you have selected. I find this much quicker than using the Image > Canvas Size route.

The "Press" style does convert to CMYK. You can check this by going to the Advanced tab in the export box. The only way that I have managed to make greyscale PDFs from colour documents is by re-saving the PDF in Acrobat as a greyscale postscript file, then re-distilling. Easy to do...
