The answer is, to go into the properties of the 'real' backup set and select 'make this the default backup set'. I was then able to right click on the accidentaly created backup set and the delete option was available under the all tasks.

I have a schedule policy setup to do a daily incremental Exchange mailbox backup and to run a full backup on the 15th of the month. The full backup didn't run last night because the incremental started first. Is there a way I can exclude the 15th from the incremental backup?
