oops...didn't read properly! Sorry. Only thing I can think of is to check Organisation Config>Hub Transport>Remote Domains>Properties of Default and the second tab. Allow automatic replies should be ticked.
I should have added that we had a similar issue for non admin users and the ones who had not inherited permissions hadn't got the correct security settings.
In Exchange 2003 you could restrict who could send through an Internet Mail Connector using the Deliver Restricions option. Does anyone know if/how that can be done in Exchange 2007?

I dont know about Mac mail but we had similar problems with Entourage and that has to be configured to so the exchange server name is your front end server and passwords in plain text.
Also check with the software assurance which 2007 CAL you will get as there are 2 different 2007 CAL's.

I suggest you setup a public folder for contact items for these users and you can then in the properties of this tick "Show this folder as an outlook adress book" on the oulook address book tab.
You can create a custom installation by using the Custom Installation Wizard which is part of the Office 2003 resource kit. It creates a mst file which you then apply using the setup.exe when installing office or outlook.
