I tried "elapsed days" - and while that gives me percent complete as a unit of days, the scale of days at the top is still in calendar time.

I found a work around for this problem (which seems to reoccur...strange). If you open the relationships window with the table that is out of view selected in the tables window in access - then "hide table"; then "Add Table" - it will add it back in an accessible location...
For some reason, between now and last night, when I open the Relationships window - There are three tables that are outside the scrollable area of the viewer!?!? I know this because there are relationships that are drawn between them and other tables.
