I think you would normally use the smtp connector if you want to setup custom smtp routing. You might want to setup a connector for a particular company and add encryption. You do not need it as benlu said.
Is their outlook running in cached mode. If so the problem could be your the offline address book. Try rebuilding it and then do a send and receive of the offline address book on the client.
