You could also pull a call report (if you have it set up) and look for extensions that have no activity.

You mention Cisco router -- are you also connecting through a Cisco switch (L2 or L3)? Portfast enabled on the ports? Some of the phones might be timing out before the negotiation takes place if it's not enabled on the connected ports.

You'll need to install SQLyog or something on the HQ server itself... I believe it's shorewaredb, and port 4308/4309. To backup the database, use the scripts on the HQ's ShoreTel server directory (they will do the backup hot, otherwise you'll need to close all ST services and copy the files out...
I'm assuming they are looking to remove the call forward, and send the number back to you as a DNIS value... if you haven't changed anything on your PBX, they should just be able to turn the call forwarding off, and revert the changes?

Check your routes and NAT entries -- ensure that you are able to route to and from your VPN network (running any dynamic routing protocols)?
You may also need to set up additional NAT entries between your VPN and network....
A sanitized configuration will make this process easier.
