On the Edge server you need to configure the internet connector to point to the smarthost.
The other connectors are created automaticly when adding the Edge subscription.

Have you installed the latest SP's and patches available ? If yes have you installed some 3rd party software that does things with Exchange ? If yes then try to remove this and look if the messages dissapears.

The option you mention is not in there. You should install Exchange 2007 and after that install the appropiate agent for Exchange 2007 on the mailbox server.

If you only want that they can modify items in a specific OU then use the delegate wizard to assign the the appropiate permissions. This can be done by right clicking on the OU and select delegate control.
About your question if it is possible to give permissions on a specific storage...

Also check the send and receive connectors on both side.
