Just remember, you will have to upgrade the integration services also. I am setting my test lab across multiple VMs. just like the Hyper-V tutorials. My lab consist of 16 VMs across three domains. i am excited.
just becareful with the Server 2008 firewall. If you want to turn off the firewall, you will need to turn off all Windows Server 2008 Firewall Profiles

Technically, you will run adprep /forestprep on schema master to update the schema and run DCPROMO on Server 2008. As long as you back up your DCs, it should be safe.
I assume you will have to replicate the data from Server 2008 DC to Server 2003, then sync ADAM with Server 2003

That will be tough since your clients are not on the domain.
I would say, just join the clients to the domain, Use IPSec policy to secure the communication.

i agree with schtek. Turn off all built-in firewalls.
go to Server Manager > Configuration > Windows Firewall > Right click properties.
Make sure you turn off Firewall state on Domain Profile, Private Profile and Public Profile.
