On the Windows 7 machines is network discovery enabled? That is under Network and Sharing Center and advanced sharing properties.
As far as the server goes I would recommend installing a desktop OS for simplicity. It could be used as it sets but you would want to ensure it isn't running DHCP...

First I would suggest testing to see if your server is an open relay. You can go to http://www.mxtoolbox.com/ and test it there. Check that first and if you are not an open relay then I assist further.

If what you are trying to do is setup another static ip in the same network for the purposes of port forwarding. Then all you have to do is create the port forwarding rule as you normally would and apply the secondary address to the rule. I ran into this same thing and beat my against the wall...
No it won't be that simple unfortunately. I have not done this migration directly. But I believe the path will be to build the new SBS 2008 box in a new domain. Use the active directory migration tool to move users. Then use exmerge to export mailboxes and import them into the new Exchange...
Sbs 2003 will support a 2008 dc. I have several clients running with this scenario. You just have to update the schema as you would on any other 2003 dc.

Ironically that is why I needed to take these test so fast. I had planned on studying longer but it didn't happen. The other thing that test covered alot of was WSUS and network monitoring and management. Data collector sets, perfmon, reliability monitor and network monitor. Authentication...
I just took the 70-648 which is the 640 & 642 combined. I failed it espescially the 640 portion of it. On the 642 portion I did better but still wasn't as prepared as I thought I was. A big portion covered Network Access and I had a couple of questions pertaining to Direct Access. Direct Access...
It is not necessarily enabled in SBS 2003. As a part of the Internet connection wizard you have the option to enable it. I think it says use Outlook via the Web. Maybe this article will help to ensure it is enabled. http://technet.microsoft.com/en-us/library/bb123622(EXCHG.65).aspx

The Ipad supports Exchange accounts by default. You don't need any 3rd party software. Here is a link with a how to http://www.ehow.com/how_6397345_set-microsoft-exchange-accounts-ipad.html
Also your Exchange Server has to have RPC over Http enabled.
