I don't believe any version of Aloha masks all numbers. However, in order to be compliant with Visa Cisp you need to be on version 5.315 or higher.

copy the translog from one of the working terminals back to the server and refresh data. This is a gamble. It will either work or crash the entire system. It has worked 9 out of ten times for me.
I don't believe there is a reroute by job code option. However, what you can do is create seperate menus and job groups for each of the job codes and reroute the menus.
you can also reroute printing by terminal. this comes in handy when you have 2 bars on 2 different floors or rooms.
Make sure you have run the regrind utility on any dated folders.if this is in a lab just delete all the old days if you don't need them. That could help.
Yes ,Aloha has a program called gift certificate manager. It is an add-on to the system. It is not as feature rich as Aloha E-card but it does what you are looking for. They also have a frequent buyer and delivery program. They charge a one time fee and it is loaded onto your server.
