For the DHCP I also recommend the "default-router" command so that the devices have a gateway. Otherwise it can be a mess.
For the backup link, I'll assume you have both your mainline and your back up link configured.

Something I would suggest with your default route would be finding the next hop IP address. I would assume it would be the same for both lines. Remember, only one default route will be put in the routing table.
Also, you can always set a default interface in your route-map. That might take care...
Route maps are probably your best bet as you want to control what traffic goes where.

I would definetly stay away from Simulators. I've used tons of them. While Boson Netsim is probably the best, they are still just junk. They are not bad for practice when you have a few minutes at work, but you really cannot do any advanced or even intermediate configs on them.
