Solved this on my own. Turns out you need to make sure that the codec for video is in the IP-region. This isn't the case by default.

Thank you for your help everyone. We use a very nice program called "Automate" that actually runs a script on ASA that changes the password on all my Meet-me VDNs.

I'm curious to know if anyone has run into issue where you cannot reset the passcode on the Meet-me VDN. An "in-use" condition comes up when no one is in the call.
