Old kernel will be automatically copied to unix.old file
in /stand slice. You also can copy file /stand/unix to any
other file, e.g. /stand/myunix
But general recommendation is to backup all filesystem before additional hardware installation.
Preserving old unix kernel doesn't eliminate all...
SCOAdmin doesn't make boot N1 disk which is siutable
for installation. You could find the image of this disk
on OpenServer 5.05 CDROM ( directory images, if I remember
correct) and then restore the boot disk via command dd
