Rstudio and Runtime's tools are both pretty good at simple lost partition table problems.

comtec17 is correct. With RAID-5 systems it's possible to rebuild the entire array using any 2 of 3 drives. With only 1 there's no chance of getting any useful data, regardless of stripe-size.
