Aha! Thanks for the pointer Eugene. However, this only refers to the Windows version but I have discovered that if, after a very slow download from the Adobe website, we can still get it to work on a Mac even though the instructions say specifically that on a MAc the whole application itself...- BigDoubleD

IDCS2 EPS Export (Text to Outlines) & Selection Help
Your first idea is a good idea, a single line, word, letter etc is easily missed when preparing artwork for export. Be careful though when selecting all on a page and converting text to paths, if your text box has a fill you can get unwanted results and sometimes text boxes still stay as text...- BigDoubleD
