You can. Connect the Ethernet0 (E0) (via AUI) to the server directly via cross-over cable, or connect it to a switch/hub via straight cable, then hook the server the switch/hub.
Make sure you assign correct IP for the E0, as well as IP for the server.

You can use the "route-map" or policy-based routing feature where you can virtually tie traffic to strictly flow from one interface to another specific interface.
Example:

interface FastEthernet0/0
ip address 192.168.1.1 255.255.255.0
!
interface FastEthernet0/1
ip address 192.168.2.1...
