What you can try first is to create a new admin user with the same rights of the default administrator user. Login with that account, check if everything is fine. Delete the profile of the default administrator (which one gave problems). And relogin with your default administrator... it will...
You're best off getting the Windows SBS 2008 premium version, they include a seperate license for Windows Server 2008 Standard which you can use for a sql server deployment or a terminal server deployment.
Terminal Server mode isn't supported on the main Windows SBS 2008 machine.

What you have to do in short:
- Make sure your BESAdmin account has the necessary rights on your new exchange 2003 server, send and receive rights + full mailbox rights
- On your BES server edit your MAPI Profile to your new server
- Restart BES
- Uninstall exchange 2000
