xp_smtp_sendmail - Showing HTML tags

Hello, I'm using a extended stored procedure called xp_smtp_sendmail to create emails for users of a custom application. I'm passing the message out in HTML to fomat it nicely. It works when most users view it but I have one individual that it displays the HTML tags in the message. I made sure her default in Outlook was set to read HTML messages.

Anyone have experience with how to fix this?
