WSS 3.0 (SQL 2000) to SharePoint Server 2010 (SQL 2008)

I've been researching migrating our WSS 3.0 server to SharePoint Server 2010 and was wondering if anyone has any suggestions, advice or guidance.

Our preference is to migrate sites individually - and will setup a SharePoint 2007 server as a 'go-between' if necessary. But I'm not even sure how to do this - or what the process is called in order to research it.

Alternatively - if our only choice is to do a database attach, can we do this in our environment going from SQL 2000 to SQL 2008 as well as from WSS 3.0 RTM (32 bit) to SharePoint Server 2010. And can I take a copy of the production database from SQL 2000 and import this to a test server to see how it goes?

Is this something that we can safely/easily do on our own? I prefer to take the safest route even if it means a lot of extra work.

When I've done migrations in the past, I always went the db detach / attach route. Also making sure to take into account any custom features or code.

I've always tested migrations by using a virtual lab or a single VM. This would allow me to test a few ideas and make sure I didn't miss a feature or 3rd part software we had forgotten about.
