Word 2016 Ribbon - Where to find old "Format Menu" and then "Tabs"

I'm trying to replicate some formatted text for an old letterhead for which no one has the original source.

I found some instructions for what sounds like may work for one piece of my puzzle here:

Only problem is it's obviously dated since Microsoft significantly changed the UI with the introduction of the Ribbon back in 2007 (which I do like, thankfully).

Most things I can find / translate between old menu system and ribbon, but so far I'm coming up empty on this one.

Can anyone point me in the right direction of what "tabs" then would be equivalent to now in the new UI?

Maybe I'm on to something now?

I just went to Home -> Styles -> clicked to add/create a new style -> Modify button -> Format button (at bottom left) -> Tabs from Format menu

Not sure if this will get me there, but looks right for getting started.

So I got there, but if I had of just read further down in his article, I'd of found the better option - special character - the first one on the list works a charm: the "Em Dash" - keyboard shorcut = [Alt]+[Ctrl]+Num[-]!
