Word 2007 not updating template from Word 2000

We have a template that was made in Microsoft Word 2000, then the document was protected. Users that open the document in Word 2000 updates the "Todays Date" with no problems. If a Word 2007 user opens the same document it does not update the "Todays Date" field with the currect date. If I remove the protection on the document and then double click the field, which then opens the formatting screen, change nothing and close it (the formatting screen) the Date changes. I am thinking it has to do woth the protection of the document from Word 2000 to Word 2007 but have no idea what????

Using Tools\Protect Document\Forms from the toolbar.

It is a quote form that the creator didn't want people using it to change.
