Do you mean a document with controls like formfields?
There are no native hot keys, other than the normal use of Tab.
What exactly do you want to do? A hot key that moves to the next control? A hot key that puts up a questions asking which control you want to move to? A hot key that fills in one of the forms, as part of its "advance"?
In any case, again, there are no native hot keys for use on either a userform, or a document form. You could make some, but then you woul dhave to decide exactly what you want each one to do. Not a bad place to start anyway.
What I am looking for is something we used in transcription about 15 years ago in Word. It was a "@" sign that when we used it would advance us to the next "@". Of course it was programmed by someone in ITS, so I don't know how it was done. At that time it wasn't used in a particular field.
Now I am wanting to put them into a form for doctor's offices to advance to the next field rather than having to use arrows to get through the form. The form is in Word 2003.
As you can probably figure out I am definitely not a technician, just a transcriptionist trying to figure out how to do this. Looks like you have had quite a bit of experience in "Office"!
Perhaps you are looking for "Shortcut Keys". This is from an old Word 2000 help file but it should point you in the right direction.

Click Keyboard.
In the Save changes in box, click the current document name or template in which you want to save the shortcut key changes.

Any shortcut keys that are currently assigned appear in the Current keys box.
In the Press new shortcut key box, type the shortcut key combination you want to assign.

More details please. If they are formfields, then flyboy is correct. Natively, TAB moves field to field in sequence.
So, are these "fields" formfields? Is your document Protected for forms. If it is, then Tab works. If these are not really fields, then you will have to explain more.
BTW: what exactly would be the advantage of a "hot key" versus an arrow key? It seems to me that you are still pressing a key.
