I have a workstation that I use all the time that has WIN XP SP2 with WIN 2003 Server on the LAN. I moved the "My Doc's" location to a file server on the LAN so it is easier to backup. I have customized most of the sub-directory names to ones that are more meaningful, but Windows keeps creating some of the default ones such as "MY EBooks", "My Music", etc, which I do not use and have to delete all the time to keep the file folder list to a minimum.

Any one know how to keep the system from re-creating these folders?

It is not possible.
This is hard coded into the Shell.

What you can do is to move the ones you do not want to see in My Documents somewhere else so they do not "clutter" your list.

And how to move Shared folders if you want:
