Will Exchange 2003 Leave Mail on a Pop Server?

We have recently set up Exchange 2003 server to retrieve mail from a catch all account on a Pop3 server. Only trouble is Exchange keeps deleting all the mail from the Pop server and we would really like it left there.

Anyone know what settings we need?
