Is it possible to use wildcards in the transport rules on Exchange 2007. I want to be able to use a standard signature but chnage the company and username as to who is sending it. Now in 2003 i was sure you could use %username% and it would pick up the username of the person from Active Directory amd i missing something or has this feature gone?

No. You can't pick those AD attributes as part of a transport rule. For that, you'd need something from a third party vendor, such as Exclaimer.
