Which version of MS Project 2003 do I need

I have a 20 client network. Windows 2003 Server. XP Pro clients.

I need 3 users to be able to run MS Project 2003. The project will not need external, intranet or web access. I plan on keeping the MPP file in a shared folder on the nework. Users do not need concurrent useage.

Can I just get the Standard Edition?

Yup - Standard is sufficient.

It's unclear if you intend this, but Best Practices says that only one person (the PM or her designated updater) is allowed to update a plan. If you want to share info, do it via a spreadsheet.

I acutally do have three people, unavoidable however. It's a manufacturing facility, working 3 shifts.
 
Well, it's only one person per shift so I expect it will work with9out too many probs.
