Which practice tests are more like the real tests?

The only one of these I have any experience with are the questions included on the Readiness Review CD that come with the MS Press MCSA/MCSE books. These questions are "powered by MeasureUp", or something to that effect.

The Readiness Review questions are not actual exam questions. They are, however, worded in the same way as actual exam questions, and cover the same range of topics.

Used Self Test ones myself to and liked them, colleagues use Transcenders and they seem pretty good to - not used the other mentioned.
 
Transcenders for well over a dozen tests (three MCSEs and an MCSA:Messaging) now. As long as they are recent versions, you'll do good. I've never bought a book that focused on certification tests, but I've bought plenty that dealt with specific products.
