It depends on how you are mapping the U: drive. Is it defined in the user's properties box in either Active Directory Users and Computers or Computer Management? Do you have U: set as the rootdrive? Is there a login script that maps U: to the old location still? Did you set a static mapping in the session by clicking on a share and selecting "map network drive"?
There are many places it could be coming from. Sorry I couldn't help more right now, but maybe we can start narrowing it down.
