Where is information stored on the exchange server?

I am very unfamiliar with Exchange 2000, and we just setup our first server a few days ago. Could anyone tell me where the actual data is stored on the server? Is the data setup similar to PST file for each user? We used to just have our users use a stand alone PST file on their local workstations, but of course, it is difficult to back all that data up on a tape backup. So, by migrating to the Exchange server, we are hoping that all the data (contacts, emails, calendars, etc.) will now all be stored on a single server, which we can now backup much easier. But when I look at the different directories on the server, it is difficult to see exactly where the data is. Thanks for any help.
