Where does s-variable definition happen?

I look at the output of my template generated index.htm and see that the setup entered name, phone#s etc have been substituted. I look at the html and see something like:
<dd><!--webbot bot=&quot;Substitution&quot; s-variable=&quot;CompanyPhone&quot; --></dd>
Somewhere CompanyPhone has been given a value of the proper phone number. Where do I find that saved value? I thought maybe Visual Basic Macro - but display VB macros and don't see anything? Any thoughts?

Clarification - I am unclear on the concept of webbots. This substitution seems to be a webbot thing. There must be a place where you can alter a substitution made at the time you built your site using a web template. I can overtype the variable name with a hardcoded value, but doubt if that is the best approach.
