How can I see when a database was last accessed?

I am new DBA for a copy with many, many different databases on many different servers. I am trying to document each of them and get rid of old databases that are no longer in uses. Is there a way for me to see when a specific database was last accessed?

No not really.

You may need to set up a Profiler trace to track the access to the databases you are looking into.
