Hello,
What will happen if you run dcpromo and make the server single server, will ALL the mailboxes and user accounts be removed?

Once I remove it, I will run dcpromo again and configure it again - but was not sure if this is the correct way?

What I ultimately want is to be able to reconfigure the DNS correctly so that Exchange works properly.

Anyway any thoughts.

If you need to fix DNS, why in the world would you demote the domain controller? Yes, if you only have one DC, and you demote it, you will lose everything.

Might be a good idea to export all mailboxes before hand if you do go ahead.

They you will be able to import them into the new domain.
