What to backup? 1

My company utilizines Exchange 2003 Server Enterprise Edition on a Windows 2003 Server on a dual P4 Xeon server with RAID 5. I'm having a difficult time getting them to invest in a legitimate backup system due to relatively slow business. I've come up with the idea of backing everything up onto an external hard drive but want to be sure I am not forgetting anything. In addition to the .log and .mml files what else should I be backing up? Also, besides the typical copy and paste from one drive to the next are there any steps I need to take while doing this such as shutting down the Exchange services or can I leave them running while doing this?
 
1. System state of an AD DC.
2. Online backup of the exchange information store.


That's it. You can do this with ntbackup. With this, you can rebuild your AD and Exchange.
