What do you need to do with the backup? If you are looking for a 'bare metal restore' you would be better off with Portlock which will let you image a netware server. This is your fastest recovery method, and not terribly expensive.
For zen - what are you backing up? Unless you are doing asset management there is no historical data in the zen database. It will re-populate itself when the server comes back up.
To backup the apps/settings etc on the server, you generally want everything on the SYS volume.. so you get system, etc, java, apache, public, and other key folders. There isn't a 'system state' equivilant that I am aware of although there are machine specific settings. There is also a DOS partition with key boot-time files. Unless you run 'dosfat' (just type that at the console prompt), your backup app will not be able to see the dos partition.
To backup your eDir tree, I would strongly reccomend "deTroubler". It's inexpensive, backs up your whole tree and lets you do single object restores with a click.. even restores printers. It's pretty amazing and I would never go back to life without it. (Yes, i use it)
