What should I omit from backup job?

I am running Veritas 9.1 on a Windows 2003 Server with Exchange 2003. My question is what folders are recommended to be excluded from a backup job? Thanks in advance.

I don't want to back up the Symantec Anti-Virus related folders and was wondering if there were any other recommended exclusions. Thank you for you post.
