I'm seeing these defitions VoIP and IP telephony, do they represent the same thing?
 
Basicly this is one and the same.
VoIP = Voice over IP
IP telephony well... telephony is voice, so make you're math :p

Some are using the term VoIP when they are using SIP trunks as their outside lines instead of Pots or ISDN line.

IP telephony is the package

You can have VoIP without IP phones. Think of VoIP as the network and IP telephony is VoIP + IP phone sets.

VOIP = Voice Over IP

This means that voice signals are converted to data packets (for further reading google nyquist theorem) these are then forwarded over what we have come to know as the internet (or other networks as appropriate) using IP conventions and at the other end converted back.

There are many ways to benefit from this technology, but contrary to popular belief toll bypass is a minor benefit!
