What is needed to do an artificial "restore point" on a Server 2012

We have a new 2012 server in the box and I want to do some lab work with it before is is incorporated into our domain.

I understand that 2012 does not have registry restore points any longer.

What is needed to create an artificial restore point so that when I'm done practicing I can just restore back to new? Do I need to backup the entire C: drive or can I just do certain portions?
