What is Collation?

Hi I used phpmyadmin 2.6.1 to create a new DB. There is a pull down option next to where I enter the table name called collation. I kept it as "Collation however some options show...ascibin...big_5 utf_8bin hebrew...etc.

Since I left it default i notice my tables have collation latin_swedish_ci next to them. I beleive this is having an effect on my search capabilty.

The php my admin page shows some info also:
saying my mysql charset is UTF-8 unicode
and
mysql collation utf_general-ci
