What is best way to transfer or rescue data???

Hi everyone hows it going??? I have a question which a Friend of mine has answered recently but i am to ashamed to admit I hadn't a clue what he was on about! So here goes. What is the best way to transfer files from one hard drive to another. My friend(who is into IT support) says he uses ghost to copy the image from one hard drive then he browses the image and saves what files he wants to the new hard drive. I have done this and can browse the image but cant work out how to copy from the image to the new drive. So to sum up....If the hard drive in a PC goes down is it still possible to ghost the drive?? So as to recover the data and the it can be put back onto a replacement drive in the PC. Or is there another option?

you need two things.

1. the image must be available
(harddisk/cd/dvd/usb/network...)
2. you need to be able to boot

boot to ghost, it writes fat/fat32/ntfs. from windows you can use a tool, ghostexplorer, wich lets you browse the image and extract files/folder like in explorer.
