What is a cube and can you give me a simple example of how it would be used? I am using Cognos Impromptu V. 7.1.339.0 with multiple catalogs.

You need to have transformer and powerplay to make use of cubes.
In their simplest form they resemble an Excel pivot table but they are much more powerful.

 
Cubes can be built from Impromptu queries using Transformer and viewed with Power Play. As dhulbert said, cubes are like multidimensional Excel pivot tables.

Cubes are a great tool to give you a high level review of your data. You can use a cube report to monitor any big changes in your data,then it allows you to dill down through the layers to see exactly what it driving the change. An example would be: You see your sales drop in a certain region for a Month, so you drill down through your sales mgr, then your sales people, then finally to the sales person that is driving the decline.
