What happens to my emails if I add a new NS to my domain name?

Hello,
I couldn't find any answer to this question, so I decided to ask it here.

Currently my domain points to two nameservers : ns1.webhost.com, and ns2.webhost.com.
If I add a new one: ns3.newwebhost.com. where are all my emails going to be stored?
Also I was wondering if people were going to be redirected to the ns3.newwebhost.com only if my current webhost doesn't reply.

If you have three name servers registered then DNS requests for your domain will go to one of these three servers. Which one depends on a number of factors that other DNS servers take into consideration when choosing which server to send the request to.

As for your email, that depends on where the MX record points to. All your name servers should have the same zone file with the same DNS information.
